In today’s busy world people have taken to fast-food instead of preparing a delicious tasty home-cooked meal. The art of cooking has been sacrificed for take-out and the enjoyment of creating a meal that is savory and fulfilling has been lost. I will show you how you can in just 30-40 minutes you can prepare an easy delicious, mouth-watering main dish that you and your family can enjoy for supper. You can make this meal for a family gathering, potluck, or for that holiday meal when you just don’t know what you can make to not have the same dish as everybody else.

I am sure everyone has used Hamburger Helper at some time or another. If not, well this Betty Crocker product is in every grocery store across America and other countries. The recipes are pretty basic and make great dinner items that are quick and easy to prepare and cook a wholesome healthy meal. There is a huge variety of Hamburger Helper meals available.

Hamburger Helper packages normally comes with pasta or rice, package of spices and a simple recipe. You will only need to add 1 lb of hamburger, water or milk and oil. Easy step instructions are found on the back of each box. Hamburger Helper meals usually can be made within 30 minutes or less.

Hamburger Helper can also be found in many other different flavors. Asian, Chicken, Pasta, Italian, Tuna, Mexican, New Orleans, Cheesy, Wholesome, Homestyle Favorites, Helper Complete Meals and for those on the go there is the microwave singles.

I am one who has always enjoyed spicier foods. I want a meal that is filled with flavors and that is filling. I enjoy cooking and I want anyone who eats my cooking to always remember the taste and desire for more or the recipe.

If you enjoy spices in a meal or you desire that hot flavor, then my recipes are for you. In this series of recipes articles I will be writing, I plan to share with you meal creations that I have created with the Hamburger Helper Packages and show you how to make exciting and flavorful meals for your family. The recipe and instructions below are the ones I use to make the Mexican Cheesy Enchilada meal better with a hot & spicy taste.

Ingredients Needed:

Hamburger Helper-Mexican Cheesy Enchilada

1-box Hamburger Helper Mexican Cheesy Enchilada

1 lb of lean Hamburger Meat

Milk

Water (optional)

Onion (chop ½ the onion finely)

Garlic (1 teaspoon minced)

Corn Tortilla Shells (4-5 shells chopped into pieces 1” by 2” approx.)

Can Chopped Green Chilies

Can Red Enchilada Sauce

Can Green Giant Southwestern Corn (corn, black beans and red peppers)

Tablespoon of Diced Jalapeno Peppers

Mexene Chili Powder

Chipotle Powder

Cilantro

Salsa Verde

Santita Corn Chips

Salt and Black Pepper


Step by Step Instructions for Preparations:

Step 1- Brown the 1 lb of Hamburger Meat in skillet. While meat is browning, add salt to taste, 1 teaspoon black pepper and ½ finely chopped Onion. Mix well into the meat and cook until meat is brown and onions are beginning to become translucent.

Note: With Lean Beef you should have no more than a couple of tablespoon amount of grease left in the pan after browning the meat. This is OK to leave in the mixture.

Step 2- Add the Garlic, Enchilada Sauce, Green Chilies, tablespoon of diced jalapeno peppers and the chopped Corn Tortilla pieces to the mixture and mix well. Add ½ teaspoon of Chili Powder and ¼ teaspoon of Chipotle powder and mix well. Reduce heat to medium low for about 15 minutes. Stir occasionally.

Step 3- Add the 1 cup of Milk and ½ cup of water. From the Hamburger Helper Box, take the packages of Spices and Rice and add to the mixture in the skillet. Set aside the topping mix for later. Return the heat high enough to bring the mixture back to a boil. Boil and stir for about a minute and turn heat down to Simmer and cover. Stir occasionally for 20 minutes.

Note: I will omit the water in my personal recipe of this to make a thicker meal. The enchilada sauce with the left-over grease from the browned meat can be the substitute for the water.

Step 4- Add the Southwestern Corn for the last 5 minutes of simmering. You just need to warm up the corn mixture.

Step 5- Add ½ cup of milk to the measuring cup and pour the Hamburger Helper Topping and whisk until mixed and set aside for 1 minute. After 1 minute has passed add the Salsa Verde to the cup until you reach the 1 ½ Cup line and mix well.

Step 6- When the cooking time has passed, turn off the heat and pour the Topping over the mixture. Replace the cover and let set for 5 minutes. After 5 minutes you can remove cover and stir topping into the mixture or leave it as a topping.

Step 7- Place serving on to a plate or a bowl and sprinkle crushed tortilla chips over the top. Mix the chips into the serving and enjoy!

Hi Shareitt. I try to use items that are either no salt or low salt. If you are concerned about the salt content, I suggest skipping the Salt part of the ingredients. I don't see any flavor lost from that.

Thanks Michael Jay. It is amazing what you can do to a simple recipe to change it up and make it flavorful. Most people are afraid to experiment with food, but I have always been one to add this, add that, omit this and that. lol So the recipes I write about are different than others.

I don't buy Hamburger Helper normally, because I don't like the flavor of any of them, but your recipe sounds like it would improve it so much that I'm bookmarking it to try sometime soon!

wow, i had no idea Hamburger Helper came in all those flavors. i also like to take some packaged foods and mix them with fresh ingredients, like Sandra Lee on the Food Network. good job Michael! :)

If you are eating Helper, how could the average person eating "Helper" afford the 10 extra ingredients? We like "spicy, flavorful" also, but this sounds like pure

mouth fire. Why so many different types of peppers and powdered peppery spices? Would not just Jalapenas and green onion and green peppers be more sympathetic on the mouth?

Hello Mel. I added the many other ingredients because Hamburger Helper meals, although economical are so bland for many of those who enjoy a very flavorful and very spicy meal.

Of course, people can leave out some of the powdered spices at the bottom of the list, but for those who want the "very spicy" flavor...all these can be added.

I love real enchiladas and so I added more of an "enchilada flavor" to this dish. It makes it more of a casserole dish than the Hamburger Helper recipe does.

Lol, it is not as hot as it may sound unless someone has a sensitive heat level, but it is not for those who do not like some heat!

The cook of any meal has to take into account those who will be eating the meal prepared. I do the same for those I cook for. I always make adjustments depending on my guests.

As I opened the package of Hamburger Helper (Crunchy Taco), looking forward to an inviting meal with salad and all the trimmings, much to my dismay I realized that the chips (which were sealed) were stale. I had already put them in the pan and had served it. We had to fish all the chips out of the pan but it still left a funny stale taste. It might be a good idea to check the chips before including them in the box. I don't mean to complain but just wanted to let you know that things like this do happen. Thanks for your time. Thanks for your response Karen. I understand your dilemma. I enjoy the Crunchy Taco Meal also. I will buy my own chips, Fritos to use instead of the packaged chips that come with the Hamburger Helper box.

I have opened up boxed meals before to find them old and stale. Yuk!
